Berry flavors have always been the counterweight in Russian ice cream. Where plombir and crème brûlée lean rich, raspberry, cherry, and blackcurrant lean sharp, and they sit in the same freezer cases side by side. Raspberry is the friendliest of the three: less sour than blackcurrant, less dark than cherry, and easy to hand to someone who does not usually order fruit ice cream.
Putting a berry flavor in the Lakomka format is a deliberate contrast, and it borrows from an older idea: chocolate-dipped fruit. The shell cracks cold and slightly bitter, and the tart cream underneath reads brighter for having something dark in front of it. It is made by Korovka iz Korenovki, at a Krasnodar Krai dairy that has been in production since 1952.
Tart first, then sweet. The berry hits early and bright, the cream rounds it out, and the chocolate shell adds a cocoa bitterness at the edges. It is the least sweet-tasting bar in the Lakomka line.
Ice cream. The base is plombir, the traditional Russian style built on high butterfat and simple dairy, so the texture stays dense and smooth rather than icy. The raspberry flavor rides on the cream, not on water ice.
